1 We find a raw food store near us and stop in for a quickie bite. The quinoa bowl had a dressing so similar to a dish they used to serve at the Rice Bowl in Nelson that it felt like going back in time and place. It made me miss Nelson just that much more.
2 It's almost 3 which means just a few more minutes and he's away. We linger at the airport not wanting to say goodbye but eventually he makes his way through security and we have one last wave.
3 Lists aren't for everyone but they are definitely for me. There's something about the creation of one. Listing things on a piece of paper, then numbering to prioritize and finally the big cross off the paper line that is usually bold and final.

I made a delicious quinoa salad this weekend- quinoa, black beans, chopped tomatoes, and scallions with a lime/olive oil/cumin dressing. I ate it for breakfast and lunch : )
In this attempt to omit gluten I find I must be creative!
Tahini sauce with apple cider vinegar (and sometimes tamari and/or other spices) is really good too. All gluten free. You'll likely need to perfect it to your taste.
Your salad sounds wonderful. We should share recipes soon.
